Vegan Boxty

A recipe for relationships? If Cinnamon Girl knew one, she'd invent a new dating app instead of manufacturing baking ingredients. But as a foody herself, she enjoys bringing special flavors to your table, with the culture behind them. Boxty is a fluffy and delicious Irish potato pancake, which you could serve at Hannukkah parties in a month from now as if it's a new kind of latkes.

In Ireland, single women (and gay men too these days) know making boxty is always handy, thanks to the old Irish poem:

"Boxty on the griddle,

Boxty in the pan.

If you can't make a boxty,

You'll never get a man."


Cinnamon Girl would reccomend to make boxty, stay alone, and eat it all by yourself because it's so good!


Remember, happiness comes from inside and not from finding your significant other. There are many single people who are happier than some people in a relationship. Singles day is only a good excuse for this recipe, which is also good when eating alone or with friends and family at a Hannukkah party.

The recipe is enough for 6-8 portions


Ingredients:

1 cup of all-prupose flour


1 pack of baking powder


1 TSP of salt


Spices: grounded pepper and a little bit of paprika


3 Medium-size mashed potatoes


1/2 cup of plantbased milk suppliment


5 medium-sized grated potatoes


For frying: plantbased butter suppliment (Cinnamon Girl uses coconut oil, which is 100% natural)



Instructions:

1. Mix all the dry ingredients in a bowl.


2. Mix the mashed potatoes with the plantbased milk.


3. add the mashed potatoes to the mix of dry ingredients and knead with your hands until you get a doughy texture.

4. add the grated potetoes to the dough and keep kneading it with your hands.


5. Let the dough rest for 5-10 minutes.


6. boil a bit of plantbased butter-suppliment in a pan, on medium heat.


7. choose whether you want each boxty to be the size of the pan, or if you want them smaller, used a TBSP to place them in the pan. Remember they also rise because of the baking powder.


10. When the boxty becomes a bit solid, flip it and fry the second side.


Serving:

If you want them served the traditional Irish way, Serve them with plantbased yogurt and scallion on the side, for dipping.

*Bonus tip: make a boxty buritto. As already mentioned, YOU choose the size of the boxty you make. You can flat the boxty and make it the size of the pan, then after you're done frying it, spread yogurt and add scallion. then wrapp it around vegetables, fried mushrooms or grilled tofu. YUM!
