Vegan English Cake Recipe

English Cake is very British. It's not a Jewish or Israeli cake, and yet this cake is perfect for Tu Bishvat, containing all the dry fruits and nuts.
You don't need to wait for Tu Bishvat to bake it. All you need is an excuse for a cup of tea.

*2 oiled loaf-pans
Ingredients:
1 jar of Cinnamon Girl's Vanilla Cake Mix
Lemon zest from one meduim lemon
1/3 cup of different dried fruits
1/4 cup of raisins or dried cranberries
1/4 cup of pealed pistachio
1/4 cup of chopped walnuts
1/4 dup of chopped pecan nuts
1/3 cup of vegetable oil
1.5 cups of water
Instructions:
1. Preheat the oven to 350 degrees.
2. Mix the Vanilla Cake Mix with the dried fruits, nuts, and lemon zest.
3. Add the vegetable oil and water and mix it all to dough.
4. Move the dough to the baking pans. Highly reccomended: add some cinnamon on top.
5. Bake for 20 minutes. To check if the cakes are ready, stick a toothpick in the center. The cakes are ready when the toothpick comes out clean.
