In case you didin't know about it, Cinnamon Girl was founded by a redhead Leinster rugby fan, celebrating her 38th birthday today. Don't get it wrong: she's Israeli. She could easily fool almost anybody while wearing her Irish rugby jersey at Aviva Stadium or even at Sinnotts, even though her dark eyes might turn her in. And yet, she was born on St. Patrick's Day.

Baked Beans: a Must in an Irish Breakfast

Baked beans is a traditional dish in the Irish cuisine, served are part of the Irish breakfast in every B&B, hotel or restaraunt in Ireland. Just like every Irish dish, baked beans are delicious served in the Emerald Ile, thanks to the freash and high-quality ingredients.

Ingredients:


1/2 cup of dry white beans


1 onion peeled and cutted in half


1 can of chopped tomatoes


6 garlic cloves


1 fresh tomato, peeled and chopped


8 cherry tomatoes, cutted in half


1/2 TSP smoked paprika


A 2-3 bay leaves


1/2 TSP English Pepper seeds


A pinch of ground black pepper


A pinch of ground clove


Instructions:

1. Wash the beans and leave in water for 24 hours.


2. Move the beans to a strainer, wash and sprout for 24 hours, keeping the beans humid, watering them every few hours.


3. Preheat the oven to 320 degrees.


4. Stick the English pepper seeds in the onion.


5. In a pot, boil on the stove the beans, the canned tomatoes, the fresh tomato, the onion, the garlic and the spices.

*It's highly recommended to use a pot that could be used for baking in the oven.


6. After being boiled, move into the oven.


7. Bake for 2-3 hours until the beans are softened. While baking, mix from time to time. If it gets dry, add some boiling water and mix.


8. Take out of the oven. Take out of the pot the onion, the bay leaves, the garlic and the English pepper.


9. Add the cherry tomatoes, mix and cook on the stove for another 30 minutes.

*You can do this part the morning after.


10. After the cooking is done you can add salt or seasoning. It is recommended not to add the salt before or while cooking beans because the salt is keeping the beans hard.


Serving: you can add a little bit of olive oil.


*Bonus: You can serve the next day after reheating. It will taste even better. You can even freaze the baked beans in jars, and defrost and reheat before serving.

For a Full Vegan Irish Breakfast (unlike the ones with all the meats), It's highly recommened to have the baked beans on your plate with Boxty, Irish Soda Bread, grilled or roasted tomatoes, a Vegan Egg (the talented cooks would make it sunny-side-down like in Ireland), and stirred mushrooms with herbs. The baked beans take the longest to make. Everything else will take you less than a hour to make.
