I'm rugby coach in my heart. After coaching BGU Women Rugby, I've done a season with Ternana Rugby U12. One of the top on the team was Esmeralda, the daughter of my friend Elisa, who was also a coach at the club. Esmeralda's grandmother decided to challenge her and asked her to translate to English her recipe for Ciambelline al Vino, traditional wine cookies from central Italy.
All we could say is: Grazie mille!
About 30 pieces
Preparation time: 10 minutes
Baking time: 25 minutes
Ingredients:
2 cups of all purpose flour
1/2 of sugar
1 teaspoon of baking powder
A pinch of salt
1/2 cup of olive oil
1 glass of red wine
A little sugar for coating
Preparation instructions:
Preheat oven to 355 degrees.
Mix the dry ingredients.
Add the olive oil and wine to the mixture and mix to make the dough.
Put some oil on your hands so the dough wouldn;t stick. Roll 'snakes' out of the dough and close them into rings.
Dip each ring in sugar on the top side and place on a baking pan lined with baking paper.
Bake for 20-25 minutes.
Cool the cookies in the pan. Once they reach room temperature, transfer to a glass or metal jar.
