Vegan Apple and Cinnamon Muffins Recipe

The perfect vegan muffins for Rosh Hashanah dinner. Whether you like your sweet bread with dinner, or a light desert that's not too sweet. It's unbelievable how easy it is to make these delicious fluffy vegan muffins!

If there will be any leftovers at all, these muffins would stay fresh and make a perfect breakfast the next morning. The perfect breakfast to start the new Jewish year with.

For 16 medium-sized muffins

What you need:

1 jar of Cinnamon Girl's CINNAMON MUFFINS MIX

2 medium sized Granny Smith apples

Vegetable oil and tap water



Instructions:

1. Preheat the oven to 350 Fahrenheit degrees.


2. Peal and grate the apples.


3. Add water and vegetable oil to the CINNAMON MUFFINS MIX according to the instructions on the package. And mix to a smooth dough.


4. Add the grated apples to the dough and mix.


5. Apply the dough to baking cups and bake for about 15 minutes.


6. To check if the muffins are ready stick a toothpic at their center. The muffins are ready when the toothpic comes out clean.

*Bonus: the muffins stay fresh for three days if stored in a sealed box outsied the refrigerator. You can reheat them before serving.
