All you need to do now is choose your favotie filling, or prepare a variey of fillings and enjoy different kinds of flavors on holiday dinner.
Sweet or Salty? That is the question.
Cinnamon Girl's vegan wholemeal blintzes mix has no sugar added, which makes the blintzes neutral. Some prefer their blintzes sweet, and some prefer salty. The flavor is all in the filling. Your choice of sweet or salty filling will make the flavor of your blintzes.

2. Sweet Vegan Cheese and Raisins Filling

Simple and classic, just like Bubbeh used to make.
How to make:
Cinnamon Girl reccomends to use vegan cream cheese. Add sugar or maple syrup and cinnamon as you like. Add 3 tablespoons of raisins to every 200 grams of vegan creamcheese.
*If the cheese isn't thick enough, add a little bit of instant vanilla pudding powder.
3. Blintzes or Crepes?
Never argue with French about culinary. If Aunt Eveline from Paris says so, these are not blintzes. They're crepes.
What could be possibly added to a vegan crepe? easy! Cinnamon Girl's vegan frostings.
4. Vegan Mushroom Bechamel Filling

A vegan version of the cheese and mushrooms blintzes. This filling gives the blintzes a bit of French or Italian style.
How to make: Fry onion in vegetable oil, salt and pepper, until translucent. In the meantime, make the vegan bechamel: mix coconut cream ith all purpose white flour to thick dough. Add mushrooms, garlic and seasoning or herbs to the onion. keep frying until the mushrooms and garlic are a bit scorched. Add the bechamel and mix on low heat for about 2 minutes. cool down before filling the blintzes.
Cinnamon Girl reccomends the followings for seasoning:
Nutmeg and English pepper. Gives the filling an alfredo sauce flavor. A bit of truffle would make it even tastier and classier.
Pesto. Simple and always tastes great.
Basilicum and oragano. A winning combination for all cheesy and creamy dishes.
5. Vegan Cheese and Berries Filling

In Israel in the 20th century berries were rare, and some were impossible to find. The technology of the 21st century made it possible for us Israelis to consume more imported natural ingredients. This year, on Shavuot, we coud all enjoy real European flavors in the Israeli summer.
How to make:
All you needs is vegan cheese, instant venilla pudding powder and frozen berries. defrost the berries. Whipe the vegan cheese with the pudding powder. To every 200 grams of cheese add 1/3 cup of berries with the juice and mix it until you get a good paste to use as a blintzes filling.

Sweet potatoes and cinnamon blintzes are one of the most popular dishes wherever the owner of Cinnamon Girl celebrates Shavuot.
How to make:
Cook 2 pealed and sliced medium-sized sweet potatoes, with English pepper, bay leaf, and a cinnamon stick until it soften.
In the meantime, cook one small potato until it softens.
Pour the water out of both pots, take the spices out of the sweet potatoes pot and peal the potato.
Mash all vegetables together with olive oil.
*For more flavor, you can add more cinnamon, sugar or maple syrup.
