Healthy Vegan Deep Purple Cupcakes Recipe, NO FOOD COLORING

We couldn't skip one of the best rock bands of all times: Deep Purple.
These cupcakes are not only purple. They're also delicious and healthy without the need of chemicals or food color.
After long months of work, Cinnamon Girl finally figured the right color. A perfect shade of purple, and the flavor and texture are amazin!
16 medium size cupcakes
Ingredients:
1 jar of Cinnamon Girl's Vanilla Cupcakes Mix
1 cup of frozen blueberries
1/3 cup of vegetable oil
1 cup of water
Fresh squeezed juice from one lemon
Instructions:
1. Preheat the oven to 350 degrees.
3. Mash the blueberries with vegetable oil, water and lemon juice with a blender.
4. Add the oil and the mashed beatroot to the Vanilla Cupcakes Mix , and mix it all to dough.
5. Move the dough to the baking cups and bake for 15 minutes. To check if the cupcakes are ready, stick a toothpick in the center. The cupcakes are ready when the toothpick comes out clean.
Products needed for this recipe:
*Bonus tip: one of the failures while working on the recipe lead to a great discovery: If you add 100 grams of frozen acai to the blueberry mash, the cupcakes don't come out purple, but they taste amazing!
